Dairy free Liquorice Ice cream

I made this a few days ago and it was amazing. (picture does not reflect ice cream made)
200g soft liquorice chopped
400ml coconut cream
400ml coconut milk ( I used cocoquench)
6 egg yolks
100ml of maple syrup
Place the milk and cream in a saucepan, bring to a simmer over medium heat. Add the chopped liquorice be careful don't burn yourself. mix using a whisk until Liquorice has mostly dissolved.
Combine egg yolks and maple syrup in a mixing bowl, use an electric whisk for 2 mins or until pale and creamy
while whisking add the hot milk mixture to the egg yolk mix. Then pour into clean saucepan.
Cook over low heat, stirring continuously with wooden spoon until mixture coats back of spoon. pour through a fine mesh sieve into clean bowl. Chill in the fridge until cold.
Churn the mixture in an ice cream machine according to instructions of the machine.
